Amazing Avocado and Salmon Salad Cups

Scoop out cubed avocado and mix with diced tomato, lemon juice, chili powder, garlic powder, celery salt, celery flakes, and black pepper. (A dash or sprinkle of each is fine)
Mix pink salmon (from packet) with sriracha, ginger powder, mayo, and lemon juice. 
Gently combine both mixtures and put back into avocado shells. 
Top with chili flakes and dill weed, and enjoy with a hot green tea with lemon, ginger powder and stevia.
So amazing!

Oat cakes

I mixed about two cups of gluten-free rolled oats with ground flax seeds and almond milk (you could also add egg whites), added a dash of baking powder, stevia and cinnamon, and let it soak for five minutes. The consistency was like a pudding. Next, I scooped out a large spoonful onto a heated, sprayed pan and cooked them like normal pancakes. So delicious with real maple syrup and almond butter, or whatever fruit toppings you like. Enjoy!

Gluten-free quinoa penne with broccoli pasta sauce

I used a high-fiber, high-protein quinoa blend penne (Deboles) and cooked it according to the package instructions. Next, I cooked a jar of organic pasta sauce with added onions, garlic, oregano, basil, and garlic salt. I used steamed broccoli like meatballs, and it was delicious!

Sautéed mustard greens and quinoa salad

After learning that mustard greens increase the brain’s dopamine levels I had to try them. I’ve tried every other green leafy except this one, so I thought it couldn’t be that bad. But wow, raw-it was pretty bad. They really have a bite to them and do taste like mustard. However, as I suspected, cooking them changes everything. So delicious!

Cook some sprouted quinoa like the package instructs you to, and add a little seasoning salt, set aside once cooked.

Next, sauté the greens in coconut oil with a sprinkling each of toasted sesame seeds and lemon pepper.

Combine and top with pepper to taste and enjoy!

Southwestern black bean scramble

Feel free to use tofu or egg whites, or one egg with egg whites. I simply added some black beans, sautéed onions, seasoned salt, turmeric, spinach, and garlic powder to some egg whites. I cooked the onions first, then spinach, then beans before pouring in the egg whites. Top with salsa and enjoy!
