Salmon, Brown, Rice and Spinach Salad

Sounds odd, but it was so amazing! I was quite surprised actually at how great this was.

Ingredients:
Cooked brown rice (however much you need for yourself or your family) I make big batches for the week then eat around 1/3 cup at a time.
2 cups or more of raw organic baby spinach leaves
1 packet of Chicken of the Sea pink salmon (small or large packet depending on how much you’re making).
1 lemon wedge
Non-stick spray
Bragg or other liquid aminos to taste (or gluten-free soy sauce, reduced sodium of course). I usually just squirt out a swirl of it.
Black pepper and any other spices to taste

Directions:
Saute the spinach in the non-stick spray over medium heat until just wilted.
Cook the brown rice and add liquid aminos once finished. Use directions on package/box.
Add 1 package of salmon to the brown rice and top with spinach and a squeeze of lemon.
Sprinkle on black pepper and any other spices you like.
Mix well and enjoy!
