This is so delicious!
Small egg noodles – cook according to directions, then drain and add some smart balance butter
Cook frozen mushrooms, zucchini, squash, onions, etc (comes all in a package)
Cook thin-sliced chicken breasts or other fav chicken in broth and/or light cream (just a splash of the cream for a sauce later)
Plate a little of the noodles (like a cup), top with a ton of the veggies, then the chicken and drizzle the sauce over everything.
Of course you can choose different veggies and sauce options, and I topped with sriracha because I love hot stuff.
