I’m not the best photographer, but this needed to be shared. You can make greens and healthy veggies taste good, you just need to know how to cook them. Here’s a great recipe I can’t stop making – and eating!
1 head of kale, I used blue curly
3 heads of baby bok choy, leaves discarded (can also use regular)
1 tablespoon of EVOO
1 tablespoon or less of minced garlic
A sprinkle of toasted sesame seeds (store bought)
Salt to taste
Saute the garlic in the EVOO for a minute, then throw in the veggies.
Make sure to cut then wash the veggies well. I use a veggie spray or white vinegar and water.
Cover the pan with a lid to steam the veggies until they start to turn dark green.
Stir until the kale leaves are wilted and small, and the bok choy starts to release some water.
Remove and sprinkle the sesame seeds and salt on it, and enjoy!
