Fajita chicken and rice


This one is hard to describe in a title, because there’s so much more to it than that. But it’s as easy as combining a bunch of stuff together for one delicious masterpiece that’s filling, and good for you!


Sauteed chicken strips (flavored with fajita spices like chili powder, cumin, cayenne pepper, etc, your choice) I chose 3 ounces, or the size of my palm for one serving.

Cooked bell peppers (any and all colors you want, the more the merrier!)

Sauteed onions (optional)

Cooked brown rice (just get a bag of the organic 90 second stuff, keep it simple)

1-2 tablespoons of guacamole or kaleamole (prepared foods section of Whole Foods)

4 organic cherry tomatoes, quartered


Place rice on the plate, sprinkle a little water on top, then place chicken and peppers/onions on top of that. Microwave for 1 minute. Top with the tomatoes then a dollop of guac, and you’re done! Feel free to mix it all up and sprinkle a little more spices on top if you like.
