I am loving wraps these days, I can just throw whatever I have in the break room fridge in there – and it still tastes good! This concoction is a mixture of baked chicken cubed, 1/4 cup of cooked brown rice, a 100 cal guac packet, salsa, and torn baby spinach leaves. If you put the guac down first, the other stuff tends to stick better. Then use a gluten-free spinach wrap that’s been warmed so it’s bendy. Enjoy!
