Chicken Salad

photoBad lighting in this picture, but you get the point. I bought some simply grilled chicken breasts from Whole Foods, but you could use faux meat if you’d rather. I mixed a couple of the chopped chicken breasts with:

2 tablespoons of Earth Balance Mindful Mayo Original (Or your choice of mayo-ish spreads)

Chopped onion-as much as you want

Chopped celery-as much as you want

Bacon bits (optional)

1 tablespoon of dill relish (could use sweet if you prefer)

Salt & pepper sliced almonds (could be plain if you’re watching your salt)

That’s it! It couldn’t be easier. You could eat this on a sammie, or put it on a bed of spinach leaves. Yum!
