Coconut walnut cake

This was a little experiment to make cake healthy, and it totally worked. Plus it’s very moist!

Preheat oven to 350. Spray a round dish or 8×8 square one.

Secret ingredient: 1 can of black beans-you can’t taste them, I promise. Just drain and rinse well. Throw in the blender with: 1/3 cup scant of coconut nectar
1/2 cup of coconut shreds
1/4 cup of walnuts
3 egg whites (or vegan egg subs here)
Splash of vanilla extract
1/4 cup of coconut oil
Dash of salt
Add more egg whites or liquid if your blender gets stuck.
Blend, pour, smooth, and pop in the oven. Bake for 30-35 mins. Let sit for 5-10 mins.
Feel free to add cocoa powder for a chocolate cake. Enjoy!
