veggie burger salad

This just came to me as I was eating both a salad and a veggie burger on two different plates. And lemme tell you – it was yummers together! Ok, so for this recipe all you need is:

1 Amy’s California burger patty, cooked

1 cup of baby kale

1 cup of baby spinach

1 tablespoon of Neman’s EVOO dressing (or more if you aren’t watching your sodium intake)

1 lemon wedge, squeezed

1 tablespoon of raw, organic, hulled sunflower seeds (I got them in bulk at Whole Foods)

Any other veggies you prefer like bell peppers, broccoli, etc.

Salt and pepper to taste 

Directions:

Easy peasy – simply combine all the ingredients and viola! Yummy textures, both hot and cold temperatures, and some salty and savory thrown in for good measure. Great in-a-hurry lunch salad!
