easy cabbage soup

This is so easy and perfect for the cooler weather. Cabbage is a great blood detoxifier and diuretic, as well as one of the cruciferous veggies that provides cancer protection and prevention if eaten once a week at minimum. Plus one bowl really fills you up thanks to the space it takes up in your tummy, and the water and fiber content. This is also a great starter to lunch or dinner, as it’s been proven that people who eat salad or soup before their meal eat 170 fewer calories in that one sitting.


1 small head of organic green cabbage, chopped to your liking for soup

1 tablespoon of minced garlic

1 tablespoon of EVOO (make sure it has the certification so you know it’s the real deal from Italy)

2 tablespoons or a handful of chopped onion (not purple)

1 tablespoon of curry and any other spices you like

Salt and pepper to taste. Feel free to always load up on pepper due to its vanadium and chromium content. Studies have shown this powerful antioxidant protects the body in numerous ways including lowering cholesterol, and helping the heart. Pepper also offers some anti-bacterial properties, so I add it to almost everything.


Saute the garlic and onions in EVOO until the onions are clear over medium heat, stirring often.

Add the cabbage then fill with water to your liking

Add the spices, stir and lower heat slightly. Cover with a lid and cook until the cabbage is tender. Cooking time varies, so check it every 10 mins.
