mediterranean chickpea salad

This huge salad was so filling I couldn’t finish it, no matter how hard I tried. And it’s under 350 calories even with the dressing!

Ingredients:

2 cups of organic spinach, torn

3 organic broccoli florets, segmented

1/3 cup of organic chickpeas (garbanzo beans), drained and rinsed (BPA-free can)

1 baby bella mushroom, or other variety of your choice

1 very small early girl tomato, chopped (these are sweeter than others)

2 pinches or 1 tablespoon of raw organic sunflower seeds

2 tablespoons of Newman’s EVOO and vinegar (or other you prefer)

1 teaspoon of real lemon juice liquid (or 1 lemon wedge)

Pepper to taste (no need for salt when using dressing)

Handful each of your fav veggies, but for this one I did chopped organic cucumber with peel and organic red bell pepper, chopped.

Directions:

Place spinach down, then beans, then all the other ingredients. Top with dressing and viola! Super yummy and filling!
