spaghetti squash and marinara

This was my first attempt at making spaghetti without using actual noodles, and instead I used spaghetti squash. And let me tell you-this was so much fun! Plus I was surprised at how much food I had from this little guy.

Ingredients:

1 small spaghetti squash (or bigger depending on how many people you need to feed).

1 jar of organic marinara or pasta sauce, your choice of flavors.

1 teaspoon of italian seasoning

Directions:

Preheat oven to 350 degrees and spray non-stick spray on a pan or cookie sheet.

Slice the squash carefully (not at the equator).

Scoop all the seeds and stringy stuff out and throw away.

Place face down on the pan or cookie sheet and bake for around 30 minutes.

While it’s baking warm the marinara or pasta sauce with the seasonings. Feel free to add onions, garlic, mushrooms, or anything else you desire.

Once the squash is out and cooled enough to hold, use a fork to rake down from top to bottom inside the squash. You will see spaghetti form before your eyes!

Next plate the spaghetti and top with marinara and viola! Yummy spaghetti!
